For the time being, we have decided to cancel, postpone, or move online all CIRAS in-person events. Webinars will continue as planned. Details: Leading indicators can play a vital role in preventing worker fatalities, injuries, and illnesses and strengthening other safety and health outcomes in the workplace. Leading indicators are proactive and preventive measures that can shed light about the effectiveness of safety and health activities and reveal potential problems in a safety and health program. Leading indicators are a valuable tool regardless of whether you have a safety or health program, what you have included in your program, or what stage you may be at in your program. Lagging indicators measure the occurrence and frequency of events that occurred in the past, such as the number or rate of injuries, illnesses, and fatalities. While lagging indicators can alert you to a failure in an area of your safety and health program or to the existence of a hazard, leading indicators are important because they can tell you whether your safety and health activities are effective at preventing incidents. Details: The OSHA 500 class authorizes participants who complete this train-the-trainer course to conduct 10 & 30 hour outreach classes to the construction industry and issue OTI Construction 10 & 30 hour participation cards. Details: This course covers the use of ergonomics principles to recognize, evaluate, and control workplace conditions that cause or contribute to musculoskeletal and nerve disorders. Course topics include work physiology, anthropometry, musculoskeletal disorders, use of video display terminals, and risk factors such as vibration, temperature, material handling, repetition, and lifting and patient transfers in health care. Course emphasis is on industrial case studies covering analysis and design of work stations and equipment workshops in manual lifting, and coverage of current OSHA compliance policies and guidelines. Upon course completion students will have the ability to recognize work-related musculoskeletal and nerve disorders, assess employer's ergonomic programs, and conduct ergonomic evaluations. The Iowa-Illinois Safety Council offers this OSHA course as a Host Training Organization of The Great Plains OSHA Education Center.

Basic Sausage Short Course

Speakers, nationally and internationally recognized authorities in their fields, will provide information about the latest technology available. Enrollment for this course is limited so that participants have ample opportunities to interact with speakers and staff and have their questions answered. Iowa State University’s modern Meat Laboratory allows participants to observe demonstrations utilizing the latest technology. Topics Covered: Non-meat ingredients, Basic meat science, Sausage emulsions, Sausage casings, Thermal processing, Fresh sausage, Cooked sausage, Spices and flavorings, Dry & Semi-Dry Sausage, Microbiology of sausage and processed meats, and Packaging Systems. Registration for the 2021 Basic Sausage Short Course will open on April 30, 2021 at 9:00 a.m. CST., watch this site for details. Due to the current pandemic situation, we will be limiting attendance to a total of 20 people to ensure a safe environment for everyone by following all guidelines set forth by the CDC, State of Iowa, City of Ames, and Iowa State University. The fee for the Basic Sausage Short Course is $995.00 per person, after June 28, 2021, the fee will increase to $1,195.00 per person. This fee includes course materials, lunch, refreshment breaks, and evening social events. Local transportation between the Gateway Hotel & Conference Center and the Meat Lab is also included. HACCP Workshop - Fall

Details: The HACCP workshop will be held at the Quality Inn & Suites Converence Center September 28-30, 2021. The course is designed to review the philosophy and principles of the Hazard Analysis and Critical Control Point system and to discuss how to implement HACCP in plants. This HACCP training program is consistent with the intent and scope of the USDA, FSIS regulation.his course is designed for individuals that have little or no knowledge of HACCP and individuals that would like to have a refresher on HACCP and learn of the changes that have taken place in HACCP during the last 2-3 years. One of the working groups will be designated an ''Advanced HACCP Training Working Group.'' This working group, which is limited to those that are already HACCP trained, will discuss Validation, Verification, Reassessment, Lethality, Stabilization and Listeria Control. Topics Covered: • HACCP Overview • Definition of HACCP Terms • Chemical and Physical Hazards • Microbiological Hazards • Developing SOPs and GMPs • Critical Limits, Monitoring • Methods and Corrective Action • Record Keeping and Verification • HACCP Plan Validation • HACCP Plan Reassessment. Registration for the September 28-30, 2021 HACCP Training Program will open July 30, 2021 The registration fee for the HACCP Workshop is $500.00. After September 7, 2021 the fee will be $575.00. Sausage and Processed Meats

Details: The course will cover fresh sausage, cooked sausage and dry and semi-dry sausage in addition to sectioned and formed cured meats and whole muscle precooked meats. A special feature will be a presentation on “specialty sausage products.” The course will use a hands-on approach to meat process­ing. Under the supervision of an instructor, participants will be divided into teams and have the opportunity to formulate and manufacture a processed meat product.
